Smoothies

TLOML has made great strides in convincing me that there are breakfast options other than Diet Coke or Starbucks -- an impressive feat that's taken him nearly three years to accomplish!

For a quick, filling, protein-packed breakfast that tastes delicious and helps our digestion all day, we really enjoy these easy smoothies:

Make ahead fruit syrup:
  • Fresh (or frozen) fruit -- blueberries, strawberries and raspberries all work well.
  • Splenda
  • Water
In blender, mix 2 cups fruit to 1 cup each Splenda and water. Syrup can be frozen for several weeks.

Smoothies:
  • 1 cup fruit syrup
  • 1 cup plain, fat-free yogurt
  • 1-2 cups ice
  • Protein powder, measured by package instructions
If possible, set ice out for 1/2 hour to allow it to "sweat." This will make ice easier to blend. If using frozen syrup, partially defrost in microwave to make syrup easier to work with.

Combine all ingredients in blender and mix until smooth. Divide into two large plastic cups, add a straw, and breakfast is served!
